Un proyecto argentino basado en nanotecnolog\u00eda est\u00e1 desarrollando procedimientos que logran reducir el uso de ese elemento<\/p>\n<p style=\"text-align: justify;\">\u00a0La resaca y las alergias que genera el vino a determinados consumidores podr\u00edan evitarse, en el futuro, gracias a un ingenioso proyecto que impulsan cient\u00edficos argentinos del Instituto de Ciencias Ambientales y Salud de la Fundaci\u00f3n PROSAMA conjuntamente con el Instituto Nacional de Vitivinicultura.<\/p>\n<p style=\"text-align: justify;\">\n<p style=\"text-align: justify;\">Los sulfitos, que se emplean para inhibir el crecimiento de microorganismos indeseados, son la causa de esas complicaciones. \u201cEn estudios de laboratorio, logramos reducir en forma significativa la cantidad de sulfitos con procedimientos basados en nanotecnolog\u00eda\u201d, indic\u00f3 a la Agencia CyTA el l\u00edder del proyecto, el doctor Jorge Herkovits, investigador del CONICET y presidente de la Fundaci\u00f3n PROSAMA, con sede en Buenos Aires. La iniciativa est\u00e1 financiada por la Fundaci\u00f3n Argentina de Nanotecnolog\u00eda, que depende del Ministerio de Ciencia, Tecnolog\u00eda e Innovaci\u00f3n Productiva.<\/p>\n<p style=\"text-align: justify;\">\n<p style=\"text-align: justify;\">Herkovits y su grupo emplearon nanopart\u00edculas de plata que recrean las propiedades de los sulfitos para la producci\u00f3n de vinos, actividad que se ejecuta en el Instituto Nacional de Vitivinicultura con la direcci\u00f3n de Humberto Manzano.<\/p>\n<p style=\"text-align: justify;\">\n<p style=\"text-align: justify;\">Pero en virtud de que el valor m\u00e1ximo admitido de plata por la Organizaci\u00f3n Mundial de la Salud es de 0,1 miligramos por litro, el siguiente paso de los investigadores fue desarrollar dos estrategias para sacar esas nanopart\u00edculas del vino.<\/p>\n<p style=\"text-align: justify;\">\n<p style=\"text-align: justify;\">El primer m\u00e9todo consisti\u00f3 en agregar hierro a las nanopart\u00edculas de plata para, luego, extraerlas mediante un campo electromagn\u00e9tico, como si fuera un im\u00e1n. Pero su costo a gran escala en bodegas es alto, explic\u00f3 Herkovits, quien tambi\u00e9n dirige el Grupo de Investigaciones en Seguridad Qu\u00edmica del CONICET y el Instituto de Ciencias Ambientales y Salud (ICAS).<\/p>\n<p style=\"text-align: justify;\">\n<p style=\"text-align: justify;\">Un enfoque alternativo, probado por el equipo, se bas\u00f3 en la formaci\u00f3n de un complejo de las nanopart\u00edculas de plata con caol\u00edn (roca pulverizada de muy bajo costo), que permite su extracci\u00f3n despu\u00e9s de la fermentaci\u00f3n mediante un simple filtrado del vino. \u201dIncluso estamos evaluando la posibilidad de reutilizar el complejo y por \u00faltimo recuperar la plata cuando ya no resulte eficiente para producir vinos\u201d, destac\u00f3 Herkovitz.<\/p>\n<p style=\"text-align: justify;\">\n<p style=\"text-align: justify;\">\u201cNuestro objetivo es aportar un valor agregado que nos posicione mejor en el mercado mundial\u201d, concluy\u00f3 Herkovits, quien present\u00f3 los avances del proyecto en la quinta edici\u00f3n de Nanomercosur 2015 \u201cHacia la consolidaci\u00f3n de la nanotecnolog\u00eda\u201d, organizado por la FAN.<\/p>\n<p style=\"text-align: justify;\">\n","protected":false},"excerpt":{"rendered":"<p>Algunas personas que lo consumen tienen esas complicaciones por la presencia de sulfitos en ese producto.
