{"id":2892,"date":"2016-07-25T15:29:09","date_gmt":"2016-07-25T21:29:09","guid":{"rendered":"http:\/\/otech.uaeh.edu.mx\/noti\/?p=2892"},"modified":"2016-07-25T15:29:09","modified_gmt":"2016-07-25T21:29:09","slug":"estudiantes-del-ipn","status":"publish","type":"post","link":"https:\/\/otech.uaeh.edu.mx\/noti\/verde\/estudiantes-del-ipn\/","title":{"rendered":"Estudiantes del IPN inventan merengue de pulque que combate la diarrea"},"content":{"rendered":"<p>Rodrigo Emmanuel Arroyo Gonz\u00e1lez, Daniel Dorado Guido, Juan Carlos Gonz\u00e1lez D\u00edaz y Fernando Gonz\u00e1lez Ram\u00edrez, todos estudiantes de la Escuela Nacional de Ciencias Biol\u00f3gicas<!--more--> (ENCB) del Instituto Polit\u00e9cnico Nacional (IPN) presentaron\u00a0un merengue elaborado con pulque que ayuda a eliminar bacterias que causan infecciones diarreicas.<\/p>\n<p><a href=\"http:\/\/otech.uaeh.edu.mx\/noti\/wp-content\/uploads\/2016\/07\/pulque.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-2894 aligncenter\" src=\"http:\/\/otech.uaeh.edu.mx\/noti\/wp-content\/uploads\/2016\/07\/pulque.jpg\" alt=\"pulque\" width=\"640\" height=\"360\" \/><\/a><\/p>\n<p>Los polit\u00e9cnicos se aprovecharon de las propiedades probi\u00f3ticas del pulque, es decir que ayudan a inhibir organismos pat\u00f3genos causantes de enfermedades gastrointestinales, para desarrollar su postre.<\/p>\n<p>Los estudiantes de la carrera de Ingenier\u00eda Bioqu\u00edmica recalcan que\u00a0el pulque tiene muchas propiedades positivas para la salud. Es una bebida rica en minerales, amino\u00e1cidos, enzimas y vitamina C, adem\u00e1s de contener una enzima conocida como sal biliar hidrolasa, la cual contribuye a reducir los niveles de colesterol en la sangre.<\/p>\n<p>Despu\u00e9s de barajar diferentes dulces que podr\u00edan elaborar con pulque,\u00a0eligieron el merengue luego de realizar un estudio estad\u00edstico sobre el consumo de dulces tradicionales mexicanos, siendo el merengue el m\u00e1s popular de todos.\u00a0En el proceso de fabricaci\u00f3n de su\u00a0golosina se evapora todo el etanol, por eso el merengue\u00a0puede ser consumido por \u00a0personas de todas las edades sin problemas.<\/p>\n<p>Actualmente los polit\u00e9cnicos ya est\u00e1n pensando como comercializar su producto, adem\u00e1s de buscar lograr una alianza\u00a0\u00a0con alguna empresa de reposter\u00eda para que su merengue pueda\u00a0usarse\u00a0como cubierta en cup cakes o en pays.<\/p>\n<p>Fuente:C\u00f3digo
