Quiz\u00e1 el mejor ejemplo de esto es &#8216;Ooho!&#8217;, un proyecto que\u00a0gan\u00f3 varios concursos europeos de innovaci\u00f3n\u00a0y que ha vuelto a hacerse popular porque este a\u00f1o, si todo va bien, llegar\u00e1 a los mercados. \u00bfLa idea? Una botella de agua que te puedes comer. \u00bfSu potencial? Bastante limitado<\/p>\n<h2 style=\"text-align: justify;\"><\/h2>\n<h2 style=\"text-align: justify;\">Una fruta hecha por el hombre<\/h2>\n<p><iframe loading=\"lazy\" src=\"https:\/\/www.youtube.com\/embed\/T4AVSDYLVQU\" width=\"600\" height=\"400\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n<p style=\"text-align: justify;\">Skipping Rocks Lab, los creadores de Ooho, describen el producto como &#8220;una fruta hecha por el hombre&#8221; que usa una doble membrana para contener el agua. Agua y cualquier otro l\u00edquido que se nos pase por la cabeza. Todo esto usando, seg\u00fan explican,\u00a05 veces menos CO2\u00a0y 9 veces menos energ\u00eda\u00a0que una botella tradicional.<\/p>\n<p style=\"text-align: justify;\">Pero es que, para colmo, la t\u00e9cnica que hay detr\u00e1s de estas botellas comestibles\u00a0no tiene nada de innovador.\u00a0Fue patentada por Unilever en 1946\u00a0con la idea de crear frutos del bosque artificiales y es conocida como &#8216;esferificaci\u00f3n&#8217;.<\/p>\n<h2 style=\"text-align: justify;\">Esferificar el mundo entero<\/h2>\n<p><iframe loading=\"lazy\" src=\"https:\/\/www.youtube.com\/embed\/YLjzsfgk198\" width=\"600\" height=\"400\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n<p style=\"text-align: justify;\">Durante a\u00f1os, eso s\u00ed, pas\u00f3 a un discreto segundo plano, hasta que Ferr\u00e1n Adri\u00e1 y su equipo de elBulli la introdujeron entre\u00a0las t\u00e9cnicas contempor\u00e1neas de &#8216;cocina molecular&#8217;. Hoy por hoy, no hay concurso de cocina en televisi\u00f3n que no tenga media docena de esferificaciones en cada programa.<\/p>\n<p style=\"text-align: justify;\">B\u00e1sicamente requiere de dos componentes: alginato s\u00f3dico, un espesante natural (E-401) procedente de las algas, y cloruro c\u00e1lcico (E-509). La reacci\u00f3n de estos dos compuestos produce una pared gelificada bastante s\u00f3lida que conserva el l\u00edquido en su interior.\u00a0Es tan rematadamente sencillo\u00a0que\u00a0lo pod\u00e9is hacer en casa\u00a0conforme acab\u00e9is de leer el post.<\/p>\n<h2 style=\"text-align: justify;\">Una botella que no va a cambiar el mundo<\/h2>\n<p><a href=\"http:\/\/otech.uaeh.edu.mx\/noti\/wp-content\/uploads\/2017\/04\/1366_2000.png\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-5182 aligncenter\" src=\"http:\/\/otech.uaeh.edu.mx\/noti\/wp-content\/uploads\/2017\/04\/1366_2000.png\" alt=\"1366_2000\" width=\"488\" height=\"222\" \/><\/a><\/p>\n<p style=\"text-align: justify;\">La verdad es que es una chulada: es vistoso, comestible y de bajo costo. Adem\u00e1s, el\u00a0proceso de fabricaci\u00f3n es &#8216;open-source&#8217;\u00a0por lo que cualquiera podr\u00eda iniciar su propia l\u00ednea de producci\u00f3n. Pero si queremos cambiar el mundo del agua embotellada ooho a ooho, es mejor que esperemos sentados.<\/p>\n<p style=\"text-align: justify;\">Los problemas de este tipo de botella son log\u00edsticos. No s\u00f3lo es que se degrade a los pocos d\u00edas, es que para poder sostener un ciclo industrial sobre este dise\u00f1o\u00a0se sigue necesitando pl\u00e1stico\u00a0(aunque sea film transparente).<\/p>\n<p style=\"text-align: justify;\">Y, aun as\u00ed, m\u00e1s all\u00e1 de la curiosidad, no apostar\u00eda mucho por este sistema. Quiz\u00e1 como sustituto de los vasos de agua, s\u00ed; pero me temo que para darle la vuelta a la industria del agua embotellada\u00a0se necesita algo m\u00e1s que esferificaciones.<\/p>\n<p
