El muc\u00edlago de este vegetal, es decir su jugo viscoso, se usa como aditivo en pinturas y en la preparaci\u00f3n de bebidas. Como una alternativa, investigadores de la Universidad Nacional Aut\u00f3noma de M\u00e9xico (UNAM) han desarrollado microc\u00e1psulas a partir de muc\u00edlago de nopal y s\u00e1bila para para aumentar la vida en anaquel de alimentos, f\u00e1rmacos y aditivos con propiedades nutricionales y antioxidantes.<\/p>\n<p style=\"text-align: justify;\">El doctor en ciencias qu\u00edmicas Luis Medina Torres, acad\u00e9mico de la UNAM y l\u00edder de la investigaci\u00f3n, detall\u00f3 que \u201cusamos el secado por aspersi\u00f3n que permita obtener un polvo de tama\u00f1o microm\u00e9trico a partir del muc\u00edlago del nopal y s\u00e1bila el material a encapsular. Optimizamos este proceso y en las mejores condiciones donde no se perd\u00edan sus propiedades fisicoqu\u00edmicas del polvo al rehidratarse, ya encapsulamos el antioxidante. Es como un bal\u00f3n y dentro de \u00e9l, en su n\u00facleo, agregamos una sustancia activa. Nosotros usamos el \u00e1cido g\u00e1lico, un antioxidante natural\u201d.<\/p>\n<p style=\"text-align: justify;\">Por m\u00e1s de 20 a\u00f1os de estudio, el doctor Medina Torres y su equipo de cient\u00edficos del Instituto de Investigaciones en Materiales desarrollaron el proyecto \u201cMicroencapsulaci\u00f3n de antioxidantes por el proceso de secado por aspersi\u00f3n empleando muc\u00edlagos de nopal y s\u00e1bila\u201d que liberan la sustancia activa por tiempo prolongado sin perder propiedades, benefician el tr\u00e1nsito intestinal, protegen contra agentes oxidantes, adem\u00e1s, a comparaci\u00f3n de la\u00a0de uso comercial, se resuelve un problema de contaminaci\u00f3n en Milpa Alta donde se arroja el muc\u00edlago al drenaje tras industrializar el nopal.<\/p>\n<p><a href=\"http:\/\/otech.uaeh.edu.mx\/noti\/wp-content\/uploads\/2015\/09\/C\u00e1psulas.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-568\" src=\"http:\/\/otech.uaeh.edu.mx\/noti\/wp-content\/uploads\/2015\/09\/C\u00e1psulas.jpg\" alt=\"Orange juice a stream flows in a transparent glass a glass with orange juice on a white background\" width=\"299\" height=\"199\" \/><\/a><\/p>\n<p style=\"text-align: justify;\">\u201cEncapsulamos \u00e1cido g\u00e1lico hasta en un 75 por ciento, hicimos un perfil de liberaci\u00f3n que simul\u00f3 las condiciones g\u00e1stricas similares al sistema y temperatura corporal, y observamos que una vez hidratada la microc\u00e1psula, el principio activo se liberaba despu\u00e9s de 36 horas. Es decir yo puedo tomar esas micropart\u00edculas en un jugo y tener una bebida con propiedades antioxidantes, y sustituir los espesantes de alto costo usados en la industria de alimentos para encapsular\u201d, enfatiz\u00f3 el acad\u00e9mico.<\/p>\n<p style=\"text-align: justify;\">Con el muc\u00edlago como vector de encapsulamiento tambi\u00e9n se podr\u00eda encapsular el huevo y que, al rehidratarse, se convertir\u00eda en un producto con alto valor alimenticio, con larga vida de anaquel y ventajas en su aplicaci\u00f3n y transporte.<\/p>\n<p style=\"text-align: justify;\">Cabe mencionar que m\u00e1s del 75 por ciento del territorio nacional produce cact\u00e1ceas con polisac\u00e1ridos similares a los empleados en la industria de alimentos como agentes espesantes y encapsulantes. En la investigaci\u00f3n desarrollada en conjunto con el Centro de Innovaci\u00f3n Aplicada en Tecnolog\u00edas Competitivas (CIATEC) del Conacyt, los expertos secaron el muc\u00edlago del nopal con rendimiento del 60 por ciento, generan una alternativa que optimiza los principios activos a encapsular y mantiene las propiedades de los mismos.<\/p>\n<p style=\"text-align: justify;\">El desarrollo de la microencapsulaci\u00f3n de antioxidantes ya est\u00e1 patentada por la UNAM y obtuvo el cuarto lugar del Programa de Fomento al Patentamiento y la Innovaci\u00f3n (PROFOPI 2014-2015), que busca fomentar la cultura de la propiedad industrial dentro de la Universidad.<\/p>\n<p style=\"text-align: justify;\">En tanto, con esta tecnolog\u00eda, una integrante del equipo de investigadores busca encapsular probi\u00f3ticos. \u201cYa tenemos un 50 por ciento de avance de esta nueva perspectiva del estudio y pensamos que ser\u00e1 de gran utilidad en la industria farmac\u00e9utica\u201d, finaliz\u00f3 el doctor Medina Torres.<\/p>\n<p style=\"text-align: justify;\">Tambi\u00e9n tienen desarrollado en un 70 por ciento el encapsulamiento de colorantes para la elaboraci\u00f3n de vinos y pinturas.
