Este ingrediente, que le da el sabor caracter\u00edstico, se obtiene luego de licuar y colar la pulpa.<\/p>\n<p style=\"text-align: justify;\">Para obtener el polvo de coco se utiliz\u00f3 el m\u00e9todo de secado por aspersi\u00f3n, que permite pasar un l\u00edquido a estado s\u00f3lido al usar corriente de temperatura, una metodolog\u00eda que genera polvos de part\u00edculas muy finas.<\/p>\n<p style=\"text-align: justify;\">Cynthia Stephanie Tob\u00f3n Castrill\u00f3n, mag\u00cdster en Ciencia y Tecnolog\u00eda de Alimentos de la Universidad Nacional de Colombia (U.N.) Sede Medell\u00edn, quien elabor\u00f3 el producto, explica que el primer paso fue caracterizar la pulpa para conocer par\u00e1metros f\u00edsico-qu\u00edmicos como acidez, color y pH, con el fin de identificar cu\u00e1nto tiempo alcanza a permanecer en \u00f3ptimas condiciones.<\/p>\n<p style=\"text-align: justify;\">Cuando se tuvo clara esta informaci\u00f3n se prepar\u00f3 una emulsi\u00f3n que result\u00f3 de licuar pulpa y agua de coco, sustancias estabilizantes \u2013sal y antioxidantes\u2013 y el denominado Terbutil Hidroquinona (TBHQ). Esta mezcla se homogeneiz\u00f3 durante 10 minutos a 10.000 revoluciones por minuto.<\/p>\n<p style=\"text-align: justify;\">El paso siguiente consisti\u00f3 en adicionar la fibra previamente secada y molida; despu\u00e9s se le adicion\u00f3 5 % a la preparaci\u00f3n y la cantidad ideal se determin\u00f3 luego de realizar un an\u00e1lisis estad\u00edstico.<\/p>\n<p style=\"text-align: justify;\">Para las pruebas se prepararon lotes de tres kilogramos de emulsi\u00f3n, se llevaron al equipo de secado por aspersi\u00f3n que se puso en contacto con una temperatura de entrada del aire entre 150 y 170 \u00baC, y de salida de aire entre 80 y 90 \u00baC, luego de pasar por un sistema de tuber\u00edas.<\/p>\n<p style=\"text-align: justify;\">El polvo resultante tuvo un rendimiento del 49,8 %. El producto se empac\u00f3 en muestras con temperaturas de 15, 25 y 35 \u00baC y en dos condiciones: con y sin nitr\u00f3geno. Aunque no mostraron diferencias significativas se comport\u00f3 mejor el producto que utiliz\u00f3 nitr\u00f3geno.<\/p>\n<p style=\"text-align: justify;\">Seg\u00fan la Fundaci\u00f3n Nacional de Cocoteros (Fedecoco), la principal producci\u00f3n de esta fruta en Colombia se da en Tumaco (Nari\u00f1o). El coco tiene propiedades vitam\u00ednicas como \u00e1cido f\u00f3lico y vitamina C, y minerales como potasio y f\u00f3sforo.<\/p>\n<p style=\"text-align: justify;\">Seg\u00fan la investigadora Tob\u00f3n Castrill\u00f3n, la motivaci\u00f3n para realizar este estudio se centr\u00f3 en que en Medell\u00edn es dif\u00edcil obtener coco en fruta para el consumo y tambi\u00e9n para exportaci\u00f3n, debido a que esta se trae de municipios del Pac\u00edfico colombiano.
