Un grupo de investigadores de la\u00a0Universitat Polit\u00e8cnica de Val\u00e8ncia, en colaboraci\u00f3n con el grupo gastron\u00f3mico La Sucursal y la empresa Postigo Obras y Servicios, ensayan desde finales de 2013 c\u00f3mo ser\u00e1n esos templos<!--more--> del comer en unos a\u00f1os gracias a la\u00a0inteligencia artificial\u00a0y al dise\u00f1o y la programaci\u00f3n gr\u00e1fica que se emplea en los videojuegos. Es la experiencia\u00a0Virtuchef.<\/p>\n<p style=\"text-align: justify;\">El cliente accede al restaurante donde un t\u00f3tem, con el que puede interaccionar, lo atiende, lo identifica en segundos de forma personal y le permite seleccionar una de las mesas libres. No hay recepcionista, solo una voz de mujer que dialoga con el cliente. \u201cA partir de ah\u00ed se nos proyecta en el techo una especie de br\u00fajula que nos dirigir\u00e1 hasta la mesa seleccionada; da igual las vueltas que demos al restaurante, que ese c\u00edrculo proyectado en el techo nos se\u00f1alar\u00e1 siempre la mesa\u201d, explica Javier Mateo, uno de los investigadores.<\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/otech.uaeh.edu.mx\/noti\/wp-content\/uploads\/2018\/01\/1516810694_852432_1516812958_sumario_normal1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-8614 aligncenter\" src=\"http:\/\/otech.uaeh.edu.mx\/noti\/wp-content\/uploads\/2018\/01\/1516810694_852432_1516812958_sumario_normal1.jpg\" alt=\"1516810694_852432_1516812958_sumario_normal\" width=\"500\" height=\"310\" \/><\/a><\/p>\n<p style=\"text-align: justify;\">Una vez en el lugar, la mesa se convierte en una gran pantalla multit\u00e1ctil con la que el comensal podr\u00e1 interactuar: ver el men\u00fa, escoger los platos, ver el\u00a0making off\u00a0del mismo, e incluso comunicarse con el chef, autor del plato, o con el exterior por\u00a0streaming.\u00a0Se acab\u00f3 esa pr\u00e1ctica tan popular de\u00a0fotografiar el plato\u00a0antes de hincarle el diente y subirlo a las redes sociales; la tecnolog\u00eda permitir\u00e1 llevarse en el m\u00f3vil im\u00e1genes y otro tipo de informaci\u00f3n. Mientras espera la llegada de los platos, puede consultar el tiempo, los resultados de la\u00a0Champions League\u00a0o conocer las bodegas y los vi\u00f1edos de los vinos de la carta.<\/p>\n<p style=\"text-align: justify;\">\u201cEs un proyecto cebolla, que tiene muchas capas; unas nos interesan y otras no\u201d, explica\u00a0Javier Andr\u00e9s, director gastron\u00f3mico del grupo La Sucursal y Premio Nacional de Gastronom\u00eda, que explota el restaurante del emblem\u00e1tico\u00a0edificio Veles e Vents, en pleno distrito mar\u00edtimo de Valencia. El proyecto llamado\u00a0Virtuchef\u00a0arranc\u00f3 a finales de 2013 y cuenta con el apoyo del Ministerio de Industria. Se ha probado experimentalmente, pero se est\u00e1 pensando en ubicarlo, para que el p\u00fablico en general lo pruebe y opine, en el Veles e Vent, el edificio m\u00e1s fotografiado durante la celebraci\u00f3n en Valencia de la Copa del Am\u00e9rica. \u201cEs un nuevo concepto de restaurante, que a\u00fana gastronom\u00eda y tecnolog\u00eda\u201d, prosigue Andr\u00e9s. Una autopista de la informaci\u00f3n gastron\u00f3mica porque la alta cocina genera mucha informaci\u00f3n, a\u00f1ade el chef.<\/p>\n<p style=\"text-align: justify;\">Los investigadores apuntan que no hay otro proyecto tan avanzado en el mundo como este. Una conocida cadena de hamburgueser\u00edas te localiza en la mesa donde est\u00e1s sentado y te lleva el pedido d\u00e1ndote solo una ficha. Tambi\u00e9n hay alg\u00fan local en Reino Unido tecnificado, pero con un sistema mucho m\u00e1s antiguo. \u201cUna soluci\u00f3n con tanta amalgama de tecnolog\u00edas, no creo que exista\u201d, aseguran los investigadores.<\/p>\n<p style=\"text-align: justify;\">Jaime Guixeres, coordinador cient\u00edfico del Laboratorio de Neurotecnolog\u00edas Inmersivas, responsable de\u00a0Virtuchef, subraya la \u201cexperiencia multisensorial\u201d del programa, que pretenden sea una tecnolog\u00eda democr\u00e1tica, no una que llegue solo al 1% de la poblaci\u00f3n o que cueste cientos de euros. \u201cEs una conexi\u00f3n entre dos mundos que parece que no se entienden. Ha sido una aut\u00e9ntica gozada\u201d, enfatiza Guixeres, que destaca otras muchas aplicaciones: guiarte hasta la consulta m\u00e9dica en un hospital o experiencias en tiendas. \u201cLas personas siempre son necesarias porque la experiencia gastron\u00f3mica es muy emocional.
